1 tablespoonolive oil
1tablespoondried onion flakes
2mediumcarrotschopped or diced
2cupsbrown ricecook ahead
2cupschickencook ahead and cube
1teaspoondried chive to tasteoptional
Scramble eggs over medium heat until firm, and set aside.Coat skillet with olive oil ,add garlic, onion flakes and carrots to skillet and saute until carrots are tender.Add cooked brown rice, cooked chicken, eggs and heat through, stirring occasionally. Sprinkle with chive is using.
*If you are using raw chicken, add the chicken first with the garlic and onion flakes, saute chicken until done, and then add carrot.
