Hello and Welcome to Consult Colleen! I am Colleen Carlson and I started this business because I wanted to live a healthier lifestyle and I didn’t think I had time to do it. Well, I figured out how to do it and I want to share what I learned with you.

My story begins many years ago when I was diagnosed with breast cancer at the age of 26. You can read part of my story in my blog post “Surviving Breast Cancer as a New Mom,” to get a better idea of why I began my healthy lifestyle journey.
Fast forward and I am in my forties (Survivor Status!) and as cool as that is based on my history, based on my age, not a whole lot of fun. I was struggling with my weight, my sleep, the preventative doctor appointments and tests. Oh the tests… I had been doing this since I was 26 and I am over it. So what is a girl to do? Everything she can to stay healthy. I needed a plan.
I began to research healthy eating, admittedly because I had gained a few pounds when I hit my forties and figured it was a good place to start. I have to say, I had spent my entire life depriving myself of food for the sake of the scale and it wasn’t working anymore. It was pointed out to me that I was eating less than everyone in the house and still not dropping a pound. I came across the book, Mini Habits for Weight Loss by Stephen Guise, I followed it up with In Defense of Food by Michael Pollan, and I was hooked. I had always been a believer that it was a lifestyle, not a diet that created change. I learned about processed foods and how they were making my weight situation, not to mention my health situation, worse.
From there my only problem was that I did not have hours and hours to create masterpieces in the kitchen. I wanted to reap the benefits of unprocessed foods and a healthy lifestyle but I had to get the job done and move on. I needed a plan that would help me eat and live healthier but not take my every waking hour to complete.
Consult Colleen has recipes that are not only healthy (mostly) and unprocessed (mostly), they are quick. I also have some tips and tricks to help you limit your kitchen time which will enable you to be more consistent with your new lifestyle habits. You see, I don’t believe that I survived what I survived in this life to not enjoy it. I am not perfect and I do go out to eat (a lot). I also still eat processed foods on occasion, and I have been known to buy an item in the grocery store that is not 100% clean. You do the best that you can and it all counts. If you beat yourself up over the process you are just adding another problem that could impact your health (stress).
Do the best that you can. My husband always quotes the 80/20 rule in business. I use it in life. Do your best 80% of the time and if you can’t 20% of the time, that’s okay. You are still doing great. Balance, it makes life enjoyable.
