Healthy and easy Caprese salad is a must have on hot summer nights. You can serve this up as a side dish to almost anything, but it can be a main dish if you are wanting to eat light. I love using really large tomatoes in the Caprese to ensure that the mozzarella doesn’t overwhelm the dish.
I start out by putting about a tablespoon of olive oil on the base dish so the tomato can soak up a bit while its on the plate. Extra Virgin olive oil is a nice light taste but you can use any kind you like or you can skip it. I like to add the olive oil because I love easy ways to slip healthy fats into my diet.
Next you slice the mozzarella. If you buy it in a ball it is easy and the size fits perfectly on a large tomato. If you would like to add a pinch of salt and pepper prior to putting the mozzarella over the tomato -go for it! After you top the tomato with your mozzarella, you can drizzle some balsamic glaze over the top and then just sprinkle it with basil-done! You now have some Caprese salad to enjoy and you never turned on your oven.

- 1 large tomato
- 1 8 ounce mozzarella ball I used BelGioioso
- drizzle balsamic glaze
- 1 tsp dried basil more or less according to taste
- salt and pepper to taste
